Fortune cookies Recipe



Fortune cookies are often served as a dessert in Chinese restaurants.But i saw this cookie first time in a birthday party.They wrote the winner number on it,for the lucky draw.After that i have tried this crispy cookies many times and each time it was hit among family and friends but I couldn't take the pictures as these cookies disappear so fast and today got the opportunity to Share this interesting recipe with you guys...Do try this and have fun at home.

Ingredients:


2 egg whites
1/2 tsp Vanilla Extract
1/2 tsp Almond Extract
3 tbsp Oil
8 tbsp Plain Flour
1 and 1/2 tbsp Corn Starch(i used corn flour)
A pinch salt
4 tbsp Sugar
3 tsp water


Method:




     Write Fortunes on a peace of Paper and Pre Heat the Oven to 180 degree c.



    Draw 8cm circles on the baking Paper.You can use a glass to draw the circle.



Add the eggs,vanilla extract,almond extract and oil in a mixing bowl and whisk until just frothy,not stiff.



Add plain flour,corn flour,salt,sugar and water,mix until smooth.If you want to add colour also you can add at this stage.


     Using spoon,spread 1 tsp of mixture over each circle.


            Bake for 5 minutes or until slightly brown around the edges.


Wear cotton gloves,because you have to work fast with the hot cookies.Remove cookies from paper,using knife.Place written fortune message in each cookie.


        Fold the cookie in half and press the corners.Do it fast,otherwise they will harden too quickly and break when folding.


                                             Join the two edges.


Keep that in muffin tins,so that its keeps its shape.Continue with the rest of cookies.


                       Here is our Fortune Cookies are ready.Store up to 2 days in an air tight container.

moist vanilla cake (vanilla sponge cake ) recipe


Made this Egg less vanilla cake few days back for our Wedding Anniversary.This vanilla cake recipe is very simple and taste delicious.This cake is perfect to do layers and cream frosting.I have already shared a post about how to make fondant roses and i used those roses for deco.If you have any idea to make a cakes for valentines day do try this cake with simple rose deco on top Lets Proceed with the recipe.

Baking time: 25-30 mins
Baking temp:180 degree Celsius
Baking tin size:7” Heart shape tin

Ingredients:

1 cup Plain Flour
1/2 cup Sugar 
1 tsp Baking powder 
1/2 tsp Baking soda
A pinch Salt 
1/4 cup melted butter/Oil 
1 and 1/2 tsp Vanilla extract 
1/2 cup Milk
1 tbsp any vinegar

For Frosting:

2 cups Non Diary Whipping Cream
1/2 cup icing sugar

Method:


Pre heat the oven.Shift the Plain flour,baking powder,baking soda and add it in a large mixing bowl.
Add in the milk,salt and sugar,mix well till the sugar dissolves completely.



Add in the melted butter.
Finally add the vinegar and mix well.
Grease the pan and transfer the cake mix.Bake it at 180 degree Celsius for about 25-30 minutes.


Once done remove it from the oven and cool down.
Remove the grease paper and cool the cake completely before frosting.Mean while beat the whipping cream with icing sugar.
Layer the cake into 2 and apply the frosting all over the cake.


Pipe the sides and corners of the cake.
Arrange the roses at one heart and then pipe the leaf deco at the corners of the roses.
On the other heart i wrote the Anniversary wordings.You can change and write your own wordings



Here is the basic vanilla cake with cream frosting is ready to taste

My Notes:

1. If the consistency of this cake batter is too thick then add a tbsp of milk and mix well.Don’t add water it makes your cake to break. 
2. Instead of butter you can use any odorless oil.
3.For Eggless chocolate cake you should replace 1/3 cup of flour into cocoa powder,shift it and then add it.
4.If you want to make it in vegan version then you can replace the milk into almond milk or soy milk.

top Mocha Cake


Mocha Cake is one of the easiest cake to bake I think.If you don't like coffee then you should try this cake and I'm sure you will love this one.I have made this cake already twice but then was not able to take step vise picture but this time I made it for hubby to take for office and manage to take the pics.. and hubby came back home only with praise for me from his office ..:D


Whether you love coffee or don't ..it's a must try....

Ingredients:


300g Self raising flour
200g Sugar Powder
3g Salt
300g eggs(5)
60ml Water
10g Cocoa Powder
1 tsp Coffee Essence/oil
1 tbsp Instant Coffee(i used Nescafe)
60ml Cooking Oil


Decoration:


400gm Whipping Cream
1 tsp Coffee Essence/Oil
1 tin Dark Pitted Cherries
100g Cooking Chocolate
100g Toasted Almonds


Ganache:


20g Glucose Syrup
200g Fresh Cream
200g Cooking Chocolate
20g Butter



Method:



Beat the eggs till light and fluffy.
Shift the Flour,Sugar Powder,Salt and mix them well with the egg mixture.



Add Cocoa Powder,Coffee Essence,Instant Coffee and Mix them well.
Add Cooking oil,if the Batter is thick add little water otherwise no need.



Grease the 9 inch tin and pour batter.
Pre heat the oven and bake it for about  35 minutes at 180 degree Celsius. 


Check it done completely or not,by inserting a tooth pick in the middle.
Cool down completely before doing frosting.



In a large mixing bowl add the whipping cream and Coffee essence.
Beat them well till the stiff beaks occur.



Use cake lever er or serrated knife to layer the cake into 2 layers.
Keep the 2nd layer on a turner table and spread a thin layer of topping cream on the 2nd layer.


Arrange some drained dark pitted cherries on top.
And then Smoothen with some whipped cream on top of the cherries.


Then keep the 1st layer on top.
Then cover the Whole cake with the remaining topping cream.



Start Decorating at the sides first by uisng cake comb,make patterns.
While making the patterns keep the cake in turner table and turn on full round at a strech.Dont stop in the middle and continue.



Pipe some patterns on the side corners.
Complete the piping on all the sides and set it in the fridge for sometime.Meanwhile prepare the ganache.



Melt  the Cooking chocolate,butter and the fresh cream by double boiling method.
Stir between to avoid over heating and let it cool for sometime before start decorating the cake.



Decorate the mocha cake with melted chocolate.
Drop some on the sides of the cake.



Pipe some pattern at the center 
Keep the toasted Almonds on it.



Complete the decoration by filling the remaining space with toasted almonds on top of the cake.
Cake is ready now and chill in the fridge before serving.



Enjoy the cake just as it is or with some coffee ...

matka kulfi recipe


I guess no special intro is required for Kulfi Ice cream since it is every ones favorite. In my home town they sell kulfis in a earthenware pot called ‘Matka’ filled with Ice Cream.Me and Arvind love kulfi very much but  now a days we totally stopped having ice creams as Aishu is learning vocal  Sad smile2so not making it very often at home,but I made kulfi yesterday after long time for the special occasion.  Most of the recipes calls for condensed milk and full cream but i tried it in a simple way. I am sure it tastes delicious.


 I would like to thank my bil who bought this matka pot which i used here. Thanks a lot AnnaSmile2.Lets Proceed with the recipe.

Serves: 2
prep time: 10 mins + 8 hours for setting
Cooking time: 10 mins 

Ingredients:

2 cups milk + 1/2 cup for grinding
1 slice white bread
1/2 tsp Corn Starch
5 tsp Sugar( adjust according to your taste)
3-4 Cardamom Pods(Powdered)
10 Pistachios for grinding
few Pistachios finely chopped(for garnishing)
Few saffron stands(optional)

Method:


Boil milk in a sauce pan without adding water,keep Stirring to prevent the milk from burning on the bottom of the pan.Boil it well till it becomes thick or it comes from 2 cups to 1 cup.
Remove the crust from all sides of the bread and cut the bread in small pieces.


Add the bread pieces,pistachios,milk,corn starch and blend well.(If you are using almonds add at this stage or mango pulp add at this stage).
Add cardamom powder into the milk and again boil it for few minutes.


Add the grinded pistachio mix into the milk and stir continuously.
Add little chopped pistachios and sugar,mix well.


After adding the corn starch mix the milk started to become thick so stir continuously.Turn off the heat once it reaches the thick porridge like consistency.
Cool down for some time and then pour the mix into the matka pot.If you don’t have pot you can use any moulds.


Wrap the pot or mould and set it in freezer for 6-7 hours.
Take it out from fridge just before serving.


I made this special heart shape kulfi for my HubbyRed rose2 and sending this to Priya’s Valentine’s day Event.

Variations:
You can use almond’s instead of pistachios for Kesar Badam Kulfi.
If you want to make mango kulfi you can add the mangoes pulp with the milk and mix well.
You can drop the kulfi mix in kulfi mould also if you don’t get the pot.After dropping the mix insert a stick into the mix so that it is easy for you to take out from the mould.Before taking it out just show the back of the mould in running water so that it will not stick into the mould and you will get the perfect shape.
If you are using the new Mutka pot soak in water for half an hour before use.
Do try this yummy ice cream and enjoy !!!

Kesar Badam Burfi



I love all  kinds of burfis,i have posted the recipe for coconut burfi (microwave version)and updated the stove top version too.Here am sharing the Almond burfi recipe,it is very simple to make.Only thing is that peeling the almond skin takes much time.If we know how to blanch the Almonds then making this burfi is so simple.

How to Blanch Badam(Almonds):

I have blanched almonds to make Badam(Almond) burfi so i used milk to soak almonds.If you are going to make almond flour or any other almond recipes,you can soak it in water also.


Take 1 cup of almonds and soak it in 2 cups of milk for about 1 hour.Then in a microwave safe bowl cook it for 30 seconds and take it out.If you don’t have microwave then cook the soaked almond in stove for about 1 minute and remove it from the stove.


Take out almonds from the milk and reserve the milk for later use.Let it cool down for sometime.Then press with little pressure,skin will comes out easily.Do the same for all almonds and make ready.Now the blanched almonds are ready to make Burfi.

Lets Proceed with Kesar Badam Recipe:

Ingredients:

1 cup Almonds 
2 cups Milk for soaking almonds
2 tbsp Milk for soaking Saffron 
1/2 cup Condensed milk 
2-3 Cardamom Crushed
2+3 tbsp ghee 
6-7 strands of saffron + 3-4 strands for garnishing     
2 drops yellow food color (optional) 
Few Almonds and pistachios(Sliced) - for garnishing       

Method:



Soak the saffron in 2 tbsp of warm milk and set aside.
Blanch the almonds in 2 cups of milk and use the milk for grinding the almonds.
Using a blender or mixie,grind the almonds and milk together into a fine thick paste.



Take a non stick pan, melt 2 tbsp of ghee in it and then add the grinded almond paste and keep stirring continuously.
After 2 minutes,add the saffron along with the milk and mix well,stir continuously.
Once the mixture thickens, add the condensed milk.


Melt the remaining 3 tbsp ghee separately in pan and then add the hot ghee little by little into the badam mix,keep stirring.
Add the food color,crushed cardamom,mix well.Then again stir for another 5-7 mins, making sure it doesn't stick to the bottom.
Once the ghee oozes out and the bottom turning to crisp.Switch off the stove.


Remove from the heat and grease a plate or tin.Transfer the mixture to the tray while it is still warm.
Use a wax paper for levelling the burfi.
Garnish with some chopped almonds and pistachios and the remaining saffron strands.Using Wax paper slightly press the on top of the topping,so that it will stick well into burfi nicely.


Slice it into your desired shape while it is still warm.
