How to Make Coconut Barfi (Coconut Fudge)



Ingredients for Coconut Barfi (Coconut Fudge)

Here's what you will need for this recipe:

3 cups of shredded coconut. Fresh coconut gives the best results when it comes to taste, but buying already grated coconut will save you time and might help getting a more solid texture.
1 1/2 cans of sweetened condensed milk, use the 400 grams cans
1/2 cup of sugar
1 tablespoon of powered cardamom
5 tablespoons of ghee. Ghee is a clarified butter from India. You can find it in groceries that sell imported goods.
1 cup of blanched almonds, cut into small pieces
Instructions for Making Coconut Barfi (Coconut Fudge)

Heat a heavy-bottomed pan on a medium flame and add the coconut, condensed milk and sugar. Mix well and cook until the condensed milk is reduced to a quarter of its original quantity or till you get a fudge-like consistency. Add the ghee and mix well. Add the cardamom powder, mix and turn off the fire. Grease a large platter, put the fudge on it and smooth out into a thick layer. Top the entire surface with the almonds.

Allow to cool a little bit and cut into the shape you want while the fudge is still a little bit warm. Allow to set, remove from the platter and store in an air-tight container. You can vary this recipe by rolling your barf into balls, and dipping then melted chocolate. You can also top with other nuts that you have on hand.
